Chicken (Turkey) Wild Rice Soup

This wild rice soup is delicious with either leftover chicken or turkey. Many cooks will double this recipe to feed a crowd!

Ingredients
- 2 T. butter
- 1 medium onion, thinly sliced
- 1/4 c. flour
- 4 c. chicken or turkey broth
- 4 c. cut up cooked chicken or turkey
- 1-2 carrots, thinly sliced
- 1 1/2 c. cooked wild rice (1 1/4 cup of rice to 1 3/4 c. water before cooking--to double,use 1 1/2 c. rice to 3 1/2 c. water)
- 1 c. half and half
- 1/2 c. dry cooking sherry, wine
- 1/2 t. salt
- Minced or chopped parsley

Step 1
Melt butter in pan, saute onion til tender.
Blend in flour, gradually add broth.
Cook stirring constantly til mixture thickens slightly.
Stir in rice and salt; simmer 5 minutes
Stir in chicken or turkey
Blend in half and half, sherry, sliced carrots, parsley.
Heat to serving temperature--may add black or white pepper to taste.
