Ingredients

  • Combine & set aside:
  • Aioli
  • 2 TB minced fresh cilantro
  • 3 TB light or fat-free mayo
  • 1 serrano chile, seeded & minced
  • 1 garlic clove, minced OR 1/2 tsp. jarred
  • Fish
  • 1 cup fat-free or 1% milk
  • 1 egg white, lightly beaten
  • 2 cups cornflakes, finely crushed
  • 1/4 cup all-purpose flour
  • 1/2 tsp. or more Tony Chachere's
  • 1/2 tsp. black pepper
  • 2 TB olive oil
  • 4 (6 oz.) fish fillets
  • 4 lemon wedges

Preparation

Step 1

Combine milk & egg white in shallow dish, stirring with a whisk. Combine cornflakes, flour, Tony's, & pepper. Heat oil in skillet over medium-high heat. Dip fish in milk & egg then dredge in cornflake mixture. Add to pan & cook 4 minutes on each side or until done. Serve with Aioli & lemon wedges.
