Ingredients
- Combine & set aside:
- Aioli
- 2 TB minced fresh cilantro
- 3 TB light or fat-free mayo
- 1 serrano chile, seeded & minced
- 1 garlic clove, minced OR 1/2 tsp. jarred
- Fish
- 1 cup fat-free or 1% milk
- 1 egg white, lightly beaten
- 2 cups cornflakes, finely crushed
- 1/4 cup all-purpose flour
- 1/2 tsp. or more Tony Chachere's
- 1/2 tsp. black pepper
- 2 TB olive oil
- 4 (6 oz.) fish fillets
- 4 lemon wedges

Step 1
Combine milk & egg white in shallow dish, stirring with a whisk. Combine cornflakes, flour, Tony's, & pepper. Heat oil in skillet over medium-high heat. Dip fish in milk & egg then dredge in cornflake mixture. Add to pan & cook 4 minutes on each side or until done. Serve with Aioli & lemon wedges.
