Bacon Spinach Penne

Ingredients
- 1 pkg penne pasta
- 2 tbsp olive oil
- 9 slices bacon, cut up into small pieces
- 3 tbsp minced garlic
- 1 can diced tomatoes
- 1 bag fresh spinach greens, washed and torn into bite size pieces

Preparation
Step 1
Boil pasta.
1 tbsp olive oil in a skillet over medium heat, place bacon in the skillet and cook until brown and crisp.
Add garlic and cook for about 1 minute.
Stir in tomatoes and cook until heated through.
Place the spinach into a colander, and drain the hot pasta over, so that it is wilted.
Transfer to a large serving bowl and toss with the remaining olive oil, bacon, and tomato mixture.
