Catering Company Lemon Bars

Ingredients
- Crust:
- 20 oz flour
- 4 oz 10x sugar
- 18 oz butter, chunked
- 1 Tbs lemon zest
- Filling:
- 22 oz sugar
- 2 oz flour
- 3/4 tsp baking powder
- 10 eggs
- 1 1/2 Tbs lemon zest
- 1 1/2 cup lemon juice

Step 1
1. For Crust: Mix flour, sugar and zest in food processor. Add butter and pulse until it resembles coarse meal. Press evenly in 1/2 sheet pan sprayed with nonstick cooking spray. Dock and bake at 350 for 10 min until just lightly browned. Cool.
2. For Filling: Whisk eggs, sugar and zest until smooth but not frothy. Stir in lemon juice. Combine flour and baking powder; sift and fold into wet ingredients making sure there are no lumps. Pour into crust.
3. Bake at 325, 20-25 min until set but not browned. Cool, chill and cut into 2 1/2 x 3" bars. Top with powdered sugar right before serving, if desired.

Note: Have all filling ingredients ready before mixing and be ready to go into the oven as soon as mixed so the lemon juice does not curdle the eggs.
Halve the recipe and use a 13x9-inch pan!
