Ingredients

  • 1 1/4 cups crushed graham crackers
  • 5 tablespoons melted butter
  • 3 tablespoons sugar
  • FILLING
  • 4 egg yolks
  • 1 1/4 cups condensed evaporated milk (one 14 ounce can)
  • 2 teaspoons finely grated lime zest
  • 1/2 cup lime juice squeezed from 3 - 4 limes
  • TOPPING
  • 1 cup whipping cream
  • 3 tablespoons sugar
  • 1 teaspoon vanilla

Step 1

Stir together crushed graham crackers, melted butter and sugar with a fork. Press firmly along the bottom and sides of a 9" pie plate. Bake at 325 degrees until crisp and fragrant, about 15 minutes. Cool a little.

Whisk together all filling ingredients. Pour into shell. Bake at 325 degrees until just set, about 15 minutes. Cool on a rack. Cover and chill at least 3 hours.

Whip cream, sugar and vanilla to sturdy peaks. Spread over the chilled pie.
