  • 1 med onion, grated
  • 2 tbl olive oil
  • 1 29 oz can pure pumpkin
  • 4 cups chicken broth
  • 1/2 cup cream
  • 2 tsp pumpkin pie spice
  • 3/4 tsp salt



Step 1

in saucepan, cook onion in olive oil on med-high heat 3 min or until soft. stir in pumpkin, broth, cream, spice and salt. bring to a simmer, stirring, 3 min.
sprinkle with pumpkin seeds and pepper if desired.
