Crockpot Beef and Potatoes

Ingredients

• 1 lb red potatoes/ quartered
• 1 c baby carrots
• 3 T Dijon mustard
• 2 T fresh or 1 1/2 tsp dried rosemary
• 1 tsp or 1/2 tsp thyme
• 1 tso slat
• 1/2 tsp pepper
• 1 trimmed boneless chuck roast
• 1 small onion, chopped
• 1 1/2 c beef broth

Preparation

Step 1

Spray cooker and add potatoes and onions
Mix remaining and spread over roast. Place roast on potatoes and sprinkle with onions. pour broth over
Cook LI 8-10 hours
skim beef juices for gravy
