Pork tenderloin with garlic-orange vinaigrette

Ingredients
- 4 T oil
- 2 pork tenderloins
- salt and pepper
- 1/4 c orange juice
- 2 T Dijon mustard
- 1 T honey
- 1 garlic clove

Step 1
In a large skillet, heat 1 T oil over medium heat, season pork with salt and pepper. Add pork to the skillet and cook, turning occasionally, until it reads 145 on a meat thermometer about 20 to 25 minutes. Transfer pork to a plate and cover with aluminum foil, let rest 5 to 10 minutes. In a blender, combine orange juice, mustard, honey, garlic and 2 T oil. Season with salt and pepper blend until smooth. Serve sauce over the pork.
