Preparation
Step 1
Place the garlic cloves, 1/4 cup olive oil, lime juice, rosemary, and 1.2 tsp garlic salt in a blender and puree until smooth. Combine the shrimp and the marinade in a resealable plastic bag. Marinate at least 30 min in the refrigerator.
Place an oven rack in the top of the oven and preheat the broiler.
Pour the shrimp and the marinade onto a baking sheet lined with aluminum foil. Broil 3-4 min per side until the shrimp is done. Once cooked, pour everything into a bowl and place in the refrigerator.
Bring a large pot of salted water to a boil. Add the green beans and cook 2 - 3 minutes, until tender. Drain and rinse with cold water. Drain the excess water from the chilled beans and place in a large bowl.
Heat the remaining 2 tbsp olive oil in a large skillet. Stir in minced garlic and onion. Cool until the onion has softened and turned translucent. Pour the oil over the beans and add the shrimp mixture. Toss the mixture and season with garlic salt and pepper. Cover and refrigerate for at least 1 hour. Mix in crumbled feta before serving.
