Zucchini Bread

When Zucchini is plentiful in the summer, I make several loaves and freeze them until I need a quick dessert or gift for someone.

Ingredients
- 3 Eggs
- 1 Cup Vegetable oil
- 2 Cups Sugar
- 2 Cups Grated Zucchini
- 1 tsp. Vanilla
- 3 Cups Flour
- 1 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 1 tsp. Salt
- 1 tsp. Cinnamon
- 1 Cup of Nuts or Chocolate Chips

Step 1
Mix oil and sugar and add to beaten eggs. Add grated zucchini and vanilla and cream well. Add dry ingredients and mix well. You can then add nuts and/or chocolate chips. Bake in 2 well greased and floured loaf pans at 325 degrees for one hour. Cool on wire racks. Wrap in foil and freeze, if desired. Make nice gifts with red bow added at Christmas or give to welcome a new neighbor.
