Mushroom Sausage Stuffing

This mushroom and sausage stuffing is perfect for a small chicken or Cornish game hens. The flavors from the stuffing help season the roasted hens.
Ingredients
- 4 onions thinly sliced
- 2 - 4 tablespoons olive oil
- 4 cups coarsely chopped mushrooms
- Salt and freshly ground black pepper
- 1/2 cup dry white wine
- 2 tablespoons butter
- 2 pounds turkey sausage meat removed from casing
- 1 bunch fresh tarragon leaves only

Step 1
Saute the onions in olive oil over medium low heat until caramelized, about 30 minutes.
Turn the heat up to medium high and add the mushrooms. Saute the mushrooms until crisp on the edges about 10 -15 minutes. season with salt and pepper. Turn heat on high and add the wine for a few minutes then lower heat and simmer for 10 minutes. Stir in butter one tablespoon at time and remove from heat.
In large skillet brown sausage and then add to mushroom mixture along with tarragon.
Use this stuffing for chicken or Cornish game hens.
