Ingredients

  • 2 C all-purpose flour
  • 3/4 C granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs, well-beaten
  • 1/2 C cooking oil
  • 1 C finely grated carrot
  • 1/2 C crushed pineapple, with juice
  • 1 tsp vanilla

Preparation

Step 1

Mix first 6 ingredietns in large bowl.

Add eggs, cooking oil, carrot, pineapple, juice and vanilla. Beat on low until just moistened. Spoon into greased muffin cups, filling 2/3 full.

Bake in 350F oven for 20 - 25 minutes.
