Chewy Milk Chocolate Marshmallow Cornflake Cookies

Ingredients

  • 6 tablespoons unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 tablespoon corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups cornflakes
  • 1 1/2 cups all purpose flour
  • 2 cups mini marshmallows
  • 3/4 cup milk chocolate chips

Step 1


Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.
In a large mixing bowl, using a mixer on medium speed, beat together butter, sugar and corn syrup up until creamy - about 1 minute. Beat in egg, vanilla, baking soda, baking powder and salt until combined - about 1 minute. Beat in cornflakes until combined. Reduce mixer speed to low and beat in flour until combined. Stir in marshmallows and chocolate chips until combined. Chill dough for 30 minutes in the freezer.

Drop heaping tablespoons of dough onto cookie sheets, spacing about 1 1/2 inches apart (these cookies spread a lot). Bake 12 minutes or until golden brown.

Cool 5 minutes before transferring to wire racks.
