Spinach-Artichoke Gratin

Ingredients

  • 2 c chopped yellow onions
  • 2 TB flour
  • 1.25 c milk
  • 3/4 c parmesan
  • 1/4 c mayo
  • 14 oz artichoke hearts, drained
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2-10 oz package spinach, thawed & well drained

Preparation

Step 1

Heat oven to 425°. Saute onions 6 minutes or until tender. Add flour and cook, stirring constantly, 30 seconds to 1 minute. Add milk, cook, stirring frequently 2-3 minutes or until thickened. Stir in 1 c cheese and next 4 ingredients. Add spinach, stir. Transfer to lightly greased 8" square pan. Sprinkle with remaining cheese. Bake15 minutes or until cheese is melted and bubbly. Let stand 5 minutes.
