Chicken and Broccoli Casserole

  • 2 big bunches of broccoli, cut into florets and steam until tender
  • 6 chicken breasts or 1 roaster chicken, cut into bite size pieces
  • 2 cans cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup mayo
  • 1 T. lemon juice
  • 1/4 tsp curry powder
  • 1/2 cup shredded cheddar
  • 1/2 cup bread crumbs
  • 1/2 stick butter
  • rice
  • 1-2 tsp curry powder
  • butter


Servings 8


Step 1

Putcooked and well drained broccoli in 9 x 13 casserole dish. Add chicken on top. Combine soups, mayo, lemon juice, curry and cheddar and pour over chicken. Top with bread crumbs and butter pats. Bake at 350 for 40 minutes.

Serve with rice mixed with curry powder and butter. (For every 2 cups of rice use 1 tsp curry and 1 T. butter)
