Potatoes w/Rosemary & Garlic, Roasted

Ingredients

  • 1 whole head of garlic
  • 1 1/2 lbs. small potatoes
  • 1 T olive oil
  • 1/4 t salt
  • 1/4 t pepper
  • 1 T fresh rosemary, chopped

Preparation

Step 1

Place garlic & potatoes in saucepan. Cover with water & boil. Drain immediately. Combine the oil, salt, pepper & rosemary in large bowl. Add potatoes, tossing to coat. Arrange potatoes in wok and set on grill. Cover & cook, stir occasionally until tender (30 mins.) Separate the garlic into cloves & discard skins. Stir the garlic into the potatoes for the last 5 mins. Garnish with rosemary sprigs.
