Chocolate Zucchini Cake

Ingredients

• Glaze :
• 2 1/2 c flour
• 1/2 c cocoa
• 2 1/2 t baking powder
• 1 t salt
• 1 1/2 t baking soda
• 1 t cinnamon
• 3/4 c butter
• 2 c sugar
• 3 eggs
• 2 t vanilla
• 2 t grated orange peel
• 1/2 c milk
• 2 c grated zucchini
• 1 c chopped walnuts or pecans
• 2 c conf sugar
• 3 T milk
• 1 t vanilla

Preparation

Step 1

Preheat oven to 350 deg. Combine flour, cocoa, baking powder, soda, salt & cinnamon; set aside. Beat together butter & sugar until smooth. Add eggs to the butter & sugar mix one at a time, beating well after each addition. Stir in vanilla, orange peel and zucchini. Grease & flour bundt pan. Bake for 50 mins. Cool 15 mins. Invert on wire rack to cool thoroughly. Drizzle glaze over cake.
