Sweet Potato Bread & Pineapple Butter

Ingredients

  • 1 3/4 C all purpose flour
  • 1 1/2 C sugar
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs 1 C mashed sweet potatoes
  • 1/2 C canola oil
  • 1/3 C water
  • 1/2 C butter softened
  • 1 can (8oz.) crushed pineapple, well drained

Preparation

Step 1

1. Combine the first 7 ingredients. Then combine the eggs, potatoes,, oil and water. Stir into dry ingredients just until moistened.
2. Transfer to greased loaf pan. Bake at 350 for 50-60 min.
3. In small bowl, combine butter and pineapple.
