Ingredients

  • 1 1/2 cups (375 mL) Robin Hood® All Purpose Flour or Whole Wheat Flour
  • 1/4 tsp (1 mL) salt
  • 1 1/2 tsp (7 mL) baking soda
  • 1 tsp (5 mL) cinnamon
  • 1 1/2 cups (375 mL) natural bran
  • 2/3 cup (150 mL) brown sugar, packed
  • 2 cups (500 mL) zucchini, shredded
  • 2 eggs
  • 1/4 cup (50 mL) Crisco® Vegetable Oil
  • 1 1/2 cups (375 mL) milk
  • 3/4 cup (175 mL) raisins or chocolate chips

Step 1



1. Preheat oven to 375°F (190°C). Grease muffin pans or line with paper liners.
2. Combine all dry ingredients (flour, salt, baking soda, cinnamon, bran and brown sugar) in large bowl. In medium bowl, combine all wet ingredients (zucchini, eggs, oil and milk).
3. Add the wet ingredients to the dry ingredients and mix just until blended. Add raisins or chocolate chips.
4. Fill prepared muffin pans 3/4 full. Bake in preheated 375°F (190°C) for 15 - 18 minutes, until golden brown.
