Dessert: Apple and Blackberry Crumble

I don't like oats in my crumble/crisps and I like the topping to be very crispy. Have you ever had the crumble at Ivy? They will not give out recipes and I can't afford to go to that restaurant frequently. So I kept searching for a recipe and found this online. Apple and blackberry are a great combo.

Ingredients

  • Crumble:
  • 3 apples
  • 1 1/2 oz. butter
  • 12 oz. blackberries
  • 5 oz. superfine sugar
  • pinch of cinnamon
  • 2 oz. cold water
  • 6 oz. unsalted butter, diced
  • 12 oz. flour
  • 5 1/4 oz. superfine sugar
  • small amount of brown sugar

Step 1

Filling:
First, freeze butter for 3 hours then dice into 1/4" cubes. Peel, core and dice apples into 1/2" cubes and place in fridge. Add 2 oz. water to a saucepan, add butter and heat until melted. Add apple and gently saute. Add cinnamon and sugar. Continue to stir until apples are soft (but not mushy). Add the blackberries and stir carefully for 3 minutes.

Crumble:
Mix flour and sugar, then place butter into mix and allow to come to room temperature. Cut the butter into mixture until crumbly. The crumble should be very fine like bread crumbs. Spoon the fruit into a pie plate. Sprinkle crumble mixture over the top of fruit until covered. Dust over with brown sugar. Place in preheated 350 degree oven and cook for 30 minutes until crumble is light golden brown.
