Apple Apricot Pork Chop

Ingredients
- 6 - 1 " thick loin pork chops
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 Tblsp margarine or butter
- 1/2 cup soft bread crumbs
- 1/2 cup cup chopped apple
- 1/3 cup golden or dark raisins
- 1 Tblsp brown sugar
- 1/2 tsp ginger
- 1/4 cup apricot preserves

Preparation
Step 1
Heat oven to 325
Cut deep horizontal pockeet in each chop.
In med. skillet cook onion and celery in margarine until crisp-tender
Add bread crumbs, apple, raisins, brown sugar, ginger and 2 Tbls of preserves. Mix well.
Stuff each chop with about 1/4 cup stuffing mix
Place in ungreased 13x9 baking dish; cover
Cook for 45 minutes
Uncover and spread top of chops with remaining 2 Tbls preserves.
Bake uncovered an additional 15-20 minutes or until pork chops are tender.
