Ingredients

  • Dressing (blend in blender):
  • 1 10 oz bag spinach
  • 1/2 pint blueberries
  • 1/2 cup crumbled blue cheese
  • 1/2 cup taasted pecans
  • 1 shallot chopped
  • 1/2 pint blueberries
  • 3 T sugar
  • 1/3 cup raspberry vinegar
  • 1 cup veg. oil

Step 1

Here is how I changed it. I use less blue cheese (about 1/4 cup) and I add to the dressing in the blender. I add more of the raspberry vinegar (about 1/2 cup) and sugar (about 5 T) b/c I like it sweet. Don't recommend using olive oil or even light olive oil for the oil, I think it takes away from the taste, I prefer Canola or something mild. I use more pecans also and toast them in a skillet constantly stirring b/c it is quicker than oven.

I get the big clam shell of spinach instead of the bag and the dressing recipe is plenty for that amount of spinach. And I get double of the blueberries (2 pints total).

everyone loves this recipe, I was lucky to nab it, goes with so many things too. Can add chicken too.
