Ingredients

  • 1-3/4 Cup 1-3/4 Cup flour
  • 1/4 cup 1/4 cup sugar
  • 2-1/2 tsp 2-1/2 tsp baking powder
  • 3/4 tsp 3/4 tsp salt
  • 3/4 cup 3/4 cup milk
  • 1 1 beaten egg
  • 1/3 cup 1/3 cup oil
  • 1 cup 1 cup blueberries
  • 2 Tablespoon 2 Tablespoon sugar
  • 2 tsp 2 tsp grated lemon peel
  • Glaze
  • 1/8 cup 1/8 cup melted butter
  • 1/4 cup 1/4 cup sugar
  • 2 Tablespoon 2 Tablespoon lemon juice

Preparation

Step 1

Mix flour, sugar, baking powder and salt. Make a well in the center of the flour mixture. Combine milk, egg, and oil.
Add to dry ingredients, Stir quickly just until moist
Toss blueberries , 2 Tablespoon sugar and lemon peel. Stir gently into dough. Fill 12 regular muffin tins 2/3 full.
Bake 400 degrees for 22-25 minutes
While muffins are warm brush the glaze of melted butter, sugar and lemon juice over the tops
