Apple and Cucumber Salad

Ingredients
- Dressing:
- 2 tbsp Olive Oil
- 1 tbsp White Wine Vinegar
- .5 tbsp honey
- .5 tbsp lemon juice
- 1 tbsp unsweetened 100% juice Apple Juice
- Salt & Pepper to taste
- Salad:
- 2 Crisp Red Apples
- 1 Medium peeled seedless cucumber

Directions
Wisk together dressing ingrediants up to 2 days ahead of time (refridgerate if done ahead of time).
Finely chop apples and cucumber or use food processor. Toss to coat in dressing up to 2 hours prior to serving. I like this cold, so I make it up and keep it in the fridge.
Appx 10 1/4 cup servings
