pimm's cup with muddled cucumber

  • 1 c. sugar
  • 1 1/4 inch-thick slice of unpeeled cucumbr
  • 1 1/2 oz, Pimm's no.1
  • 1/2 oz gin, Beefeater
  • 1 oz lemon juice
  • seltzer
  • lemon wedges and mint for garnish

Step 1

1. make a simple syrup: in a small pan, heat sugar and 1 c. water; boil until sugar is melted. cool. can keep in frig for weeks. a coctail shaker, muddle the cuke. Add Pimm's, gin, lemon juice and 3/4oz of simple syrup. Shake
3.strain into a tall glass filled with ice. top with selter. garnish with lemon and mint.
