TUSCAN TUNA AND WHITE BEAN SALAD

Ingredients

  • 2 cans (6 ounces each) albacore tuna
  • 2 1/2 cups cooked cannellini (white kidney) beans, or 2 12-ounce cans, rinsed and well drained
  • 1 pint cherry tomatoes, cut in half
  • 3 ribs celery, peeled of their strings and sliced
  • 1/8 - to 1/4-inch thick
  • 3 green onions, cut into 1/8-inch slices,
  • including tender green parts
  • 1/4 to 1/2 cup extra-virgin olive oil
  • Juice of 2 lemons
  • Salt and freshly ground pepper, to taste
  • Lettuce for salad

Preparation

Step 1

Drain the tuna well and place it in a
bowl. Add beans to the tuna with the remaining ingredients. Toss well. Serve on lettuce. Serves 8
