Turkey Picadillo Lettuce Wraps

Ingredients

  • Nonstick Cooking Spray
  • 1 medium onion, chopped
  • 1 medium garlic glove, minced
  • 1 medium red bell pepper, stemmed and chopped
  • 1 pound lean ground turkey
  • 1 large tomato, roughly chopped
  • 1/2 cup minced fresh parsley leaves or 2 Tbs. dried parsley flakes
  • 1 Tbs. minced fresh oregano leaves or 1 tsp. dried oregano
  • 1 Tbs. Chili Powder
  • 1 Tbs. Worcestershire sauce
  • 1/2 tsp. Cinnamon
  • 1 1/2 tsp. apple-cider vinegar
  • 8 Romaine or Boston lettuce leaves, thick stems removed

Step 1

Spray large skillet. Set over medium heat for 1 minute. Add onion and garlic. Cook, stirring occasionally, until softened, about 3 minutes. Add the bell pepper, continue cooking stirring occasionally about 2 minutes.

Add the ground turkey and break up with spoon. Cook, stirring frequently, until lightly browned, about 6 minutes.

Raise the heat to medium-high. Stir in tomato, parsley, oregano, chili powder, Worcestershire sauce, and cinnamon. Cook, stirring occasionally until the tomatos break down, their liquid evaporates, and the skillet is almost dry, about 5 minutes. Remove from hear and stir in the vinegar. Cool for 10 minutes, then spoon a scant 1/2 cup filling into each lettuce leaf, roll the leaves up like burritos and serve.
