  • 1 1/2 pounds broccoli
  • 3/4 cup water
  • 4 1/2 tablespoons olive oil
  • 1 minced garlic clove
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper
  • 1 1/2 teaspoons vinegar.

Step 1

1. Peel and slice thick stems from 1 1/2 pounds broccoli; separate florets
2. In a skillet, bring 3/4 cup water to simmer over medium-low hat. Add stems and florets; cook, covered, until bright green, 4 minutes. Stir in 4 1/2 tablespoons olive oil, 1 minced garlic clove, 1/4 teaspoon salt, and 1/8 teaspoon crushed red pepper. Cook 4 minutes.
4. Turn off heat; stir in 1 1/2 teaspoons vinegar.
