Ingredients
- 2/3 C SOUR CREAM
- 2/3 C FRESH BASIL LEAVES
- 1 t LEMON JUICE
- SALT AND PEPPER TO TASTE
- 1/2 C MAYONNAISE
- 1/2 C HORSERADISH SAUCE
- 1/2 C SOUR CREAM
- FRITTERS
- 2 T. FINELY CHOPPED ONION
- 1 T BUTTER
- 1 EGG, LIGHTLY BEATEN
- 2 MEDIUM ZUCCHINI, SHREDDED AND SQUEEZED DRY
- 1 LARGE CARROT, SHREDDED
- 1/3 C FLOUR
- 1/3 C GRATED PARMESAN CHEESE
- 1 T. CORNMEAL
- 1/2 t SALT
- 1/8 t PEPPER
- OIL FOR FRYING

Preparation
Step 1
IN A BLENDER, PLACE 2/3 C SOUR CREAM, BASIL, LEMON JUICE, SALT AND PEPPER, COVER AND PROCESS UNTIL BLENDED. TRANSFER TO A SMALL BOWL. IN ANOTHER BOWL, COMBINE MAYO, HORSERADISH AND REMAINING SOUR CREAM. COVER AND REFRIGERATE BOTH SAUCES.
PLACE ONION AND BUTTER IN MICROWAVE DISH. COVER, MICROWAVE ON HIGH UNTIL ONION IS TENDER. ADD EGG, ZUCCHINI,AND CARROT. IN A BOWL COMBINE FLOUR, CHEESE, CORNMEAL SALT AND PEPPER, STIR IN VEGETABLE MIXTURE JUST UNTIL COMBINED.
IN A SKILLET OR DEEP FRYER, HEAT 2 INCHES OF OIL TO 375*. DROP ROUNDED TABLESPOONS OF BATTER INTO OIL. FRY 1-2 MINUTES OR UNTIL GOLDEN BROWN, TURNING ONCE. DRAIN ON PAPER TOWEL.
