Penne w/Spinach, Cherry Tomatoes & Pecorino Cheese

Ingredients
- 1 Box Penne
- 4 Tbsp. EVOO
- 1 clove garlic, chopped
- 4 cups cherry tomatoes, 1/2
- 1 bag (6 0z.) baby spinach
- 1 cup Pecorino cheese or parmesan

Preparation
Step 1
Cook Pasta
In a medium skillet, sauté garlic in 2 Tbsp. EVOO over medium heat until garlic is nice golden color.
Stir in tomatoes, season w/salt & pepper and sauté for 5 mins. over high heat.
Stir in spinach, cook 2-3 minutes
Drain pasta, add to veggies
Stir in remaining EVOO
Top with cheese before serving
