Garlic Sauteed Pasta and Asparagus

Got this recipe from Melissa in 10 Dollar Meals on Food Network, but made a few changes to suit me better

Ingredients

  • 1/3 cup EVOO
  • 2 cloves garlic, minced
  • 1 small onion, minced
  • 6 stalks of Asparagus cute into bite size pieces
  • salt and pepper
  • 2 tbs red wine vinegar
  • 2 cups penne pasta, cooked al dente
  • Parmesan cheese for garnish

Preparation

Step 1

1. In large saute pan, heat olive oil, garlic and onion until oil infused with flavors

2. Add asparagus to pan and saute for about 5 minutes until tender crisp.

3. Turn up heat and add red wine vinegar and water as needed to deglaze the pan.

4. Add pasta and toss to coat with oil.

5. Garnish with Parmesan cheese
