Cauliflower and Caramelized Onion Tart

Ingredients
- 1 small head of cauilflower, cut into 1 inch florets
- 2 1/2 Tb olive oil
- 1 pie crust
- 1 large onion, halved lengthwise, thinly sliced
- 1 Tb Dijon mustard
- 2 large eggs
- 8 oz mascarpone cheese, room temp
- 1 c. grated Gruyere cheese
- 3/4 c. grated Parmasen cheese

Preparation
Step 1
Position rack in center of oven. Preheat oven to 425.
Toss cauliflower withe 1 Tb oil in large bowl. Spread on baking sheet, roast 15 mins. Turn florets over and bake about another 25 mins. Cool, then thinly slice.
Reduce oven to 350.
Weight pie crust down and bake 20 mins. Cool crust.
Heat remaining 1 1/2 Tb oil over medium heat. Add onion, cook unitl onions are golden brown, stirring occasionally, about 40 mins. Cool slightly.
Brush bottom and sides of crust with mustard. Spread onion in crust, arrange cauliflower evenly over them. Set tart on baking sheet.
Whisk eggs and cheese, except Parm. Pour over veggies. Sprinkle with Parmasen cheese.
Bake until tart is golden about 40 mins. Cool 15 mins before serving
