Stefado - (Beef And Onion Stew)

  • 2 pounds lean beef
  • 2 tablespoons olive oil - (to 3 tbspns)
  • 2 garlic cloves crushed
  • 2 bay leaves
  • 1 tablespoon wine vinegar
  • 4 ounces good-quality red wine
  • Salt to taste
  • Freshly-ground black pepper to taste
  • Water as needed
  • 2 cans boiled small white onions - (12 oz ea)
  • Hot cooked rice


Servings 4


Step 1

Saute the beef in olive oil. Add garlic, bay leaves, wine vinegar, wine and salt and pepper. Add enough water to cover. Cover and simmer for 1 1/2 to 2 hours, add more water, if necessary. When stew is ready to serve, add the onions and heat thoroughly. Serve over rice.

This recipe yields 4 to 6 servings.
