Ingredients
- 3 tablespoons vegetable oil
- 1 1/2 teaspoons cumin seeds
- 1 medium onion chopped
- 1 piece ginger - (1" long) peeled, and finely chopped
- 2 green serrano chiles finely chopped
- 2 medium tomatoes chopped
- 1/2 teaspoon cayenne pepper
- 1 1/2 tablespoons ground coriander
- 1 1/4 pounds green beans ends trimmed, and chopped into 1/4" pieces
- 1/2 teaspoon salt or to taste
- Fresh cilantro for garnish

Preparation
Step 1
Heat a wok over medium-high heat and add oil. Add cumin seeds, onions, ginger, and chiles and sauté about 3 to 4 minutes, until onions brown slightly on their edges.
Mix in the tomatoes, cayenne, and coriander and stir-fry for 1 to 2 minutes.
Add the green beans, stir-frying for another 2 to 3 minutes. Add the salt and reduce the heat to low. Cover and simmer about 20 minutes, or until the beans are firm but tender.
Serve immediately, garnished with cilantro.
This recipe yields 6 to 8 servings.
