CREAMED SWEET CORN WITH BACON

Step 1

Saute 1/4 c minced onion in 1 tbsp butter, then add 4 c super sweeet corn and 4 fully cooked crumbled pieces bacon and cook a couple minutes. Meanwhile whisk together 1 c heavy whipping cream, 1/2 c chicken broth and 1 tbsp flour. Then pour mixture into corn and bring to boil, reduce heat and simmer on low 10-12 minutes until sauce thickens. Stir in salt, pepper, 1/2 c grated Parmesan cheese and 2 tbsp fresh chopped parsley. WE TRIED THIS 7/30/12 AND AMAZINGYL EVERYONE LIKED IT. IT WAS NOT TOO HEAVY AND I THINK THAT REALLY HELPED, PLUS THE PARMEASN CHEESE ADDED A UNIQUE FLAVOR.
