Zucchini Bread

1 cup vegetable oil
3 eggs, slightly beaten
2 cups sugar
2 cups grated raw zucchini
2 tsp vanilla
3 cups all purpose flour
1 tsp baking powder
1 tsp salt
3 tsp ground cinnamon
1 cup nuts (optional)
Combine oil, eggs, zucchini & vanilla in large mixing bowl and blend well. Stir in flour, baking powder, salt & cinnamon. Do not beat! Pour into 2 well greased loaf pans. Bake at 325 for 1.5 hours or until done.
