Farro with Tomato and Onion

Ingredients

  • 1 cup pearled farro
  • 2-3 cups water
  • 1-2 Roma Tomatos (chopped)
  • 1/2 - 3/4 cup sweet onion (chopped)
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • black pepper to taste
  • 1 large clove garlic (minced)

Preparation

Step 1

Bring the water to boil and add the Farro. Let boil for approx 15 minutes, until farro is al dente. Drain and rinse with cold water.
in small bowl mix vinegar, oil, pepper and garlic - stirring or shaking very well.
Place farro in bowl, stir in tomato and onion. add oil mixture and stir well.
Serve at room temp, or chilled in fridge.
