Refrigerator Pickled Beets and Onions

  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2/3 cup granulated sugar
  • OR
  • 2/3 cup Splenda (for dieters or diabetics)
  • 1/4 teaspoon table salt
  • 1/2 teaspoon ground cinnamon
  • 1 large Vidalia or sweet type onion, peeled, sliced
  • 2 cans sliced beets and liquid from cans



Step 1

Combine vinegar, water, sugar, salt, cinnamon and sliced onion in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. In another saucepan, bring beets and the liquid from the cans to a boil. Boil for about 2 minutes. Turn heat off. Pour the hot marinade over beets and let cool. Place in clean jars. Cover and refrigerate for 8 hours or longer. Turn jar occasionally.
