Ingredients

  • Filling:
  • 2 cups 2 cups strawberries
  • 3 tablespoons 3 tablespoons coconut palm sugar
  • 1 tablespoon 1 tablespoon arrowroot powder or non-GMO corn starch
  • 1 teaspoon 1 teaspoon lemon juice
  • Crust:
  • 1/2 cup 1/2 cup oat flour
  • 1/4 cup 1/4 cup rolled oats
  • 1/4 cup 1/4 cup almonds, chopped
  • 1 tablespoon 1 tablespoon coconut palm sugar
  • Pinch Pinch Salt
  • 1/4 teaspoon 1/4 teaspoon cinnamon
  • 1/8 teaspoon 1/8 teaspoon nutmeg
  • 1/8 teaspoon 1/8 teaspoon ginger
  • 2 tablespoons 2 tablespoons coconut oil
  • 3/4 teaspoon 3/4 teaspoon vanilla

Preparation

Step 1

Preheat oven to 375°F.

Filling:
In a bowl, mix strawberries, coconut palm sugar, arrowroot powder and lemon juice. Put into a small baking dish. Set aside.

Crust:
In a bowl, mix oat flour, rolled oats, almonds, coconut palm sugar, salt, cinnamon, nutmeg and ginger. Cut in the coconut oil with a fork until the size of peas. Add vanilla and mix until just combined. Spoon over strawberry filling.

Bake 25 to 30 minutes.

Serve hot with a scoop of coconut ice cream or vanilla ice cream.
