Seared Scallops with Citrus Herb Sauce

Ingredients

  • 3/4 lb sea scallops
  • 1/4 t salt
  • 1 / t pepper
  • 1/8 t paprika
  • 3 T butter, divided
  • 1 garlic clove, minced
  • 2 T chicken broth
  • 1 T lemon juice
  • 1/8 t fresh oregano
  • 1/8 t minced fresh tarragon

Preparation

Step 1

Pat scallops dry; sprinkle with salt, pepper and paptika. In a large skillet, heat 2 T butter over medium-high heat. Add scallops; sear for 1-2 minutes on each sice or until golden brown & firm. Remove from skillet; keep warm.

Wipe skillet clean. Saute garlic in remaining butter until tender; stir in chicken broth. Cook until liquid is almost evaporated; stir in remaining ingredients. Serve with scallops.
