Apple Rhubarb Crisp

Ingredients
- 2 c fresh or frozen unsweetened sliced rhubarb, thawed and drained (10 oz fresh, or 16 oz frozen)
- 2 medium apples, cored, peeled, and sliced
- 1/2 c sugar
- 1 T cornstarch
- 2/3 c oatmeal
- 1/3 flour
- 1/4 c packed brown sugar
- 3 1/2 light margarine

Preparation
Step 1
In large bowl, combine the first 4 ingredients. Stir to mix well. Let stand for 1 hour. Spoon into an ungreased 8 x 8 pan. Preheat oven to 375. In medium bowl, stir together the topping ingredients except margarine. Using a pastry blender, cut in margarine until mixture resembles course crumbs. Sprinkle topping over rhubarb mixture. Bake uncovered for 30-40 minutes or until topping is light brown. Let cool for about 20 minutes before serving.
