1.Bring potatoes to a boil in a pot of cold salted water. Boil until tender, 10-12 minutes. Drain well. 2.Preheat oven to 425. 3.In a small pot melt butter, add minced garlic and cook 1 minute until garlic is golden. 4.Place potatoes cut side down on a baking sheet. Using a fork or potato press, smash the potatoes down until the skin pops open. Season with salt and pepper. 5.Drizzle with garlic butter and sprinkle cheese evenly over potatoes. 6.Bake for 20-25 minutes until cheese is melted and crisp.
