Garlic Potatoes (microwave)

  • 2 lbs. potatoes (red or yellow)
  • 3 garlic cloves (minced)
  • 2 T olive oil
  • 1/2 tsp. salt
  • 1/4 tsp crushed red pepper
  • 1 tsp. grated lemon peel
  • 1 tsp. chives or rosemary



Step 1

Cut unpeeled potatoes into chunks. In microwave casserole dish, combine potatoes,garlic, oil, salt and pepper. Cook covered on high 14-18 minutes or until potatoes are tender, stirring twice. Stir in lemon peel and chives. Let stand covered 5 minutes.
