Chocolate Raspberry Truffles

This is a soft truffle that has a creamy raspberry center.
Ingredients
- 8 oz. package cream cheese, softened
- 1 cup white baking chips, melted
- 3/4 cup crushed vanilla wafers (about 25 wafers)
- 1/4 cup seedless raspberry preserves
- 1 1/2 cups finely chopped almonds

Step 1
In a small bowl, beat the cream cheese until smooth. Add the melted white chips, wafer crumbs, and preserves; Beat with a hand mixer until smooth. Cover the filling and refrigerate for 2 hours or until it is easy to handle and no longer sticks to your fingers once it is handled. Shape the filling into 1" balls and roll each ball in the chopped almonds. Line a 9" x 13" airtight container with waxed paper and lay the truffles on the waxed paper. Cover and store the truffles in the refrigerator until ready to serve.
