- 2 1/2 cups all purpose flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups mashed ripe bananas
- 1/4 cup fat-free buttermilk
- 2 tbsp lemon juice
- 2 tbsp canola oil
- 2 large egg whites
- 1 large egg
- 1 tsp grated lemon zest
- 1 cup blueberries

- 1/2 cup confectioners sugar
- 2 tsp lemon juice
- 1/2 tsp grated lemon zest

Step 1
heat oven to 350.
in a large bowl combine; flour, sugar, baking powder, baking soda and salt. In a bowl, combine bananas, buttermilk, lemon juice, canola oil, egg whites egg, and lemon zest. stir into flour mixture, then stir in blueberries. pour batter into a 9 x 5 x 3 inch loaf pan coated with cooking spray, bake 1 hour. cool in pan on wire rack 15 minutes; invert; invert again. cool 10 minutes. In a bowl combine confectioners sugar, lemon juice and lemon zest. spread over top of loaf; cool completely.
