  • Crust:
  • 1 cup all-purpose flour
  • 1/3 cup shortening
  • 1/2 teaspoon salt
  • 1/4 cup cold milk or water
  • Filling:
  • 2 eggs, beaten
  • 1 16 ounce can pumpkin
  • 1 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1 13 ounce can evaporated milk

Preparation

Step 1

Crust:
Mix flour, shortening, and salt together with a pastry blender. Add milk and lightly mix with a fork. Roll out onto lightly floured surface until it is the correct size for the pie plate. Put crust into pie plate, then lightly press it against the bottom and sides of the pie plate. Remove any excess crust from the sides with knife or scissors. You can make any design you want on the edge of the crust.

Filling:
Put all ingredients into a large mixing bowl, mixing well after each addition. Pour mixture into pie crust.
Bake at 425° for 15 minutes. Reduce heat to 350° and bake for 35 to 40 minutes.

If desired, top pieces of pie with cool whip or vanilla ice cream.
