Preheat oven to 400 degrees F. Cut delicata squash in half lengthwise and scoop out the seeds. Put 1 inch of water in a baking pan and add squash halves, cut side down. Bake until soft (20 minutes or longer, depending on size). Remove from oven and take the squash out of the pan to let cool. Scoop the flesh out of the squash. Mash up the squash flesh with plenty of butter, salt, and a little maple syrup.
