Two bean salad with potatoes and bacon

Ingredients

  • 4 slices bacon
  • 1.5 lbs new potatoes, thinly sliced
  • salt and pepper
  • 6 oz wax beans, trimmed and halved
  • 6 oz green beans, trimmed and halved
  • 1 tsp olive oil
  • 2 scallions, thinly sliced
  • 4 tsp red wine vinegar

Preparation

Step 1

Preheat oven to 450. place bacon on a baking sheet, cook until browned, 8 minutes.
Drain on paper towels, and crumble into bite sized pieces.
Add potatoes to baking sheet, season with pepper, and toss to coat with bacon drippings. Cook until potatoes are brown on bottom, 15 minutes, rotating sheets halfway. Remove sheets from oven and flip potatoes over.
In a bowl, combine both beans and olive oil. Place on baking sheet with potatoes. Cook until tender, 15 minutes, rotating sheets. Transfer to a large bowl, toss with bacon, scallions and vinegar.
