In large saucepan combine potatoes with water to cover
- 6 medium potatoes
- 3 tablespoons butter or margarine
- 3 medium onions, chopped
- 1/2 pound cooked corned beef, cut into 1/2 inch cubes

- 1/2 teaspoon salt
- 1/4 teaspoon pepper

- 3 cups long-grain rice
- 1 (13-ounce) frozen bag pigeon peas or one 15-ounce can pigeon peas, drained

- 1 1/2 tbsp. sugar/stevia mix, divided (I used Domino)
- 2 tbsp. water
- 1 tsp. instant tapioca
- 1 tsp. lemon juice
- 1 tsp. vanilla extract, divided
- 2 1/2 tbsp. nutella
- 2 1/2 tbsp. light cream cheese, softened
- Optional Toppings: Mini chocolate chips, light cool whip, sugar-free whipped cream, powdered sugar

- 1 1/2 cups ice cold water
- 1 (3.4 oz.) box vanilla instant pudding mix
- 3 cups heavy cream
- 4 cups sliced ripe bananas
- 1 (12 oz.) box Nilla Wafers
Cherry Meringue Dessert

In a large bowl, beat the egg whites until foamy
- 6 egg whites
- 3/4 teaspoon cream of tartar
- 2 teaspoons vanilla extract
- 2 cups sugar
- 2 cups crushed saltines (about 60 crackers)
- 1/2 cup chopped pecans
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- 1 can (20 ounces) reduced-sugar cherry pie filling

Cookies: Melt butter and shortening together
- GLAZE:
- 1/2 c. butter or margarine
- 1/4 c. shortening
- 3/4 c. granulated sugar
- 4 eggs
- 3 c. all-purpose flour
- 5 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. anise extract (can use vanilla or lemon extract instead)
- 2 c. confectioners' sugar, sifted
- 2-4 Tbsp. milk
