Pigeon Pea Soup #1 (Sopa de Gandule)

Place meat in sauce pot. Cook for 5 minutes
- 1 1/2 pounds beef, cut small
- 5 to 6 cups water or chicken broth
- 2 Tablespoons achoite oil
- 1 round onion, diced
- 2 cloves garlic, minced
- 1 bunch Chinese parsley, chopped
- 1 green bell pepper, diced
- 1 (8 ounce) can tomato sauce
- 1/2 teaspoon curry powder
- 1/2 teaspoon oregano leaves
- 1/2 teaspoon basil
- 2 cups fresh green gandules (pigeon peas)
- 1/2 teaspoon. ground black pepper
- Salt, to tast
Low-fat Oatmeal Blondies

Preheat oven to 375°. Sift together first 5 ingredients in bowl and stir in oats
- 2 Tbsp Milk
- 1 tsp Ground Cinnamon
- 1 1/2 cups Quick Cooking Oats, uncooked
- 3/4 cup Dates, pitted
- 1 cup All Purpose Flour
- 1 Egg
- 1/2 tsp Baking Soda
- 1/4 cup Unsalted Butter
- 3/4 cup Brown Sugar, packed firmly
- 1/8 tsp Ground Cloves, ground
- 1/2 tsp Vanilla Extract
- 2 tsp Vanilla Extract
- 1 tsp Ground Ginger
- 2 Egg Whites
- 1 cup Powdered Sugar, sifted
- 1/2 cup Boiling Water

- 1 (14-ounce) can sweetened condensed milk
- 3/4 cup peanut butter
- 2 cups biscuit baking mix
- 1 teaspoon vanilla extract

- 1 pound boneless, skinless chicken breasts, cut into 1/2-inch strips
- 1 bunch broccoli, cut into florets
- 1/2 pound whole fresh mushrooms
- 1 zucchini, cut into 1/2-inch chunks
- 3 cups vegetable oil for deep-frying
